With slow-roasted local meats. Rich savory sauces. Handmade pasta. Fresh-from-the-farm vegetables. Volario’s serves bold, earthy fare inspired by the pasture-rich terrain and fragrant kitchens across the Italian Alps – right here in the Rocky Mountains.

With a menu that changes with the harvest of the season and the catches from the streams, Volario’s surprises the palate with both local produce and faraway flair. As you savor the rustic and robust flavors from the mountainous regions of northern Italy, we invite you to sit back with a nice Chianti and reflect on your day in the majestic mountains here.

Our dishes are hearty and adventurous, much like Volario himself. The legend in the Grand Valley is as old as the pines that shade the creek. Volario wasn’t from these parts. Like many of us, he visited and couldn’t imagine leaving.

OUTSTANDING! What an unexpected surprise to find such an outstanding restaurant in the middle of a local’s ski town. We celebrated my wife’s birthday and Volario’s made sure that it perfect in every way possible!!

The food was delicious. Our waiter was very attentive. Our only issue was the restaurant was very warm inside. Almost too warm.

Great food we repeated last year as our closing dinner for the family ski vacation. Service was perfect, manager was twice in our table assuring quality in food and service.

Always great food and service. The manager is very attentive and engaging with customers which adds to the experience. Their fresh pasta can’t be beat.

Table of four on a Saturday evening. Parking is brutal, but free bus line can drop you right at the door. We had a reservation and were seated immediately. Paulo was our server. Ran down the good stuff for us as this was our first trip. Started with charcuterie board. Very good! Not a crumb left! Gluten free pizza was approved by its owner. 12-layer lasagna was a hit flavor wise, but a bit underwhelming. We were (selfishly) expecting a better presentation. I had the meatballs as a main course. Absolutely delicious! The sauce had just a bit of spice to it. Would order again. Desert was lemon crème brûlée. A great finish. Pace of service was a bit off (we had to ask for water refills - twice). But the food was the star. The dining room is busy, but did not feel crowded. Noise level was just fine. Wine list is impressive. Definitely will come back.
