Welcome to Varia, a Romantic, Upscale Italian Restaurant in Norfolk.
Varia, our Italian restaurant and wine studio, features wine by the glass and a pianist six nights a week. Indulge in homemade pasta, freshly tossed pizzas from our brick oven, or signature Italian desserts like the tiramisu. Varia's modern Italian fare is made from only the best local ingredients and the wine studio features over 100 hand-selected wines, including 50 by the glass.
The dining room's intricate finishes and the warm glow of its reclaimed chandelier, formally of the Historic Cavalier's ballroom, offers an intimate ambiance that invites conversation over a full bodied merlot. Guests can book the ultra private dining room only accessible by hidden doors in the bookshelves for special events.

Varia is hands down one of the best Italian restaurants in Norfolk. From the moment you walk in, the ambiance is warm and inviting, with a stylish yet comfortable atmosphere that makes it perfect for a date night or a special occasion. The food is nothing short of excellent. The lobster ravioli was rich and flavorful, and the truffle fettuccine had the perfect balance of creamy and savory. You can really taste the quality in their house-made pasta. The wine selection is also impressive—plenty of great options to pair with your meal. The service was top-notch. Our server Evan Cash was knowledgeable, attentive, and made great recommendations without being intrusive. It’s clear that the staff takes pride in providing a great dining experience. Overall, Varia is a restaurant I’ll definitely be returning to. If you’re looking for amazing Italian food, a great wine list, and a beautiful setting, this is the place to go.

Hilton Main has great restaurants (so unusual for a hotel) and Varia is one of them. My husband must eat gluten free and he is always able to find delicious choices. He had a tuna appetizer that was paper thin slices of raw tuna with crispy capers and dollops of sauces that he said were fabulous. I tried a side of pasta al olio to start because I wanted something small, but it was a poor choice. Rather than spaghetti or angel hair, the dish had large tubular pasta that was gummy and tough. It was not expensive so I just left it on the plate. The main dishes were wonderful, however. My husband loved his lobster risotto and my chicken Marsala was great - an often ho-hum dish elevated to the next level and with a smaller portion size just right for me. I highly recommend Varia (but not the side of pasta)!

We had a great experience for Valentines Day. The atmosphere, service, food and music were outstanding. The Sax performance throughout the dinner was very pleasing and he engaged with us all while he walked around and played. We ate the Valentine’s menu and it was really good. The only thing was, we were not able to substitute the dessert with another. We are not big Tiramisu so we wanted to substitute it, but the Valentine menu was set and there was no substitutes. However I would still rate 5stars. We will be back. Thank you to our waiter Sean and staff.

It was our first time there and our server Evan welcomed us and explained everything patiently. The saxophone player was awesome, we enjoyed the vibe of the restaurant, the service and the food! We will be back.

Beautiful atmosphere.Food was delicious atmosphere was amazing and Ashley was my server she did an amazing job providing food recommendations and staying on top to see if we needed anything

Food was cold when it came out, hostess was not attentive when we arrived, she seemed she didn’t want to be there, loved the ambience and vibe, waitress was great, if the food wasn’t cold I may have had a different reaction. Got sat down at the front of entrance and would have liked to be sat somewhere on the inside to appreciate the decor. Very nice restaurant wish it turned out better.

Good food great service. Unfortunately the piano player must have been off that day. Kinda what drew us to this venue. Not a deal breaker. Had a great dinner.

Unfortunately it was a disappointing night . The grilled octopus app was underwhelming. It was more olive (with pits ) than octopus. Caesar salad was very good. Had to ask for pepper. They didn’t even offer a grinder of pepper. I had a seafood pasta that was good. Definitely not outstanding. My husband had a sausage pesto pasta that was inedible. Sooo salty. Waitress never came to ask how the food was . My husband went to the host stand to get help. He ordered another espresso martini(on the house) but no additional food. I had been looking forward to the night out but food disappointed. Sax player sad very good. I don’t think we will be back.

Logan, the service staff, was attentive and quick-acting. He was very responsive. My wife enjoyed the burratta salad, she hardly made a dent on her eggplant parmigiana! The short rib dish was excellent!

Unfortunately the food was not great. My dish arrived as though it had been sitting for a bit, and the spaghetti and meatballs had a very sour taste to the sauce and the meatballs were very over seasoned with what appeared to be fennel. Our kids each had ordered it- we sent one back and asked for plain pasta but they never even removed it from the bill despite not touching it
