Executive Chef Jon Simoneau has developed a menu that features fresh, sustainable raised Colorado beef for quality steak selections and a range of New American dishes that can be enjoyed. We also have a full cocktail bar and carefully curated an extensive selection of wines that is approachable and newcomers and connoisseurs alike.

We are located adjacent to Union Station on the corner of 15th & Wynkoop. Our focus is on consistently good food without the frills and fuss of haute cuisine but delivering on 5-star service.

Family dinner of eleven during the holidays. Courtney took good care of us all night and food was terrific. Highly recommend!

Happy hour food and drinks were terrific! Our bartender/waiter (unusual name we can't remember) was a great host, he even tried to create a drink on my wife's suggestion.

Nice well rounded menu at a very good price point. Food was excellent and creme brulee was unique and one of the best. Our server, apologize, I do not remember his name was professional on all levels and did an excellent job. We enjoyed our dinner very much.

We had a very nice evening dining at the Velvet Cellar. Great table by the window with city views. Our server was attentive and patient as we took our time with drinks and appetizers before ordering dinner. Cocktails were enjoyed by our party of 4, especially the Fog And Bloom. The bruschetta and arancini apps were delicious! We all enjoyed varied entrees for dinner, but the unexpected star was the green beans ordered as a side! Not to be missed! Check this place out..nice experience and good food.

Courtney was amazing. We had a great experience. Food was outstanding. Drinks were unique and flavorful. The atmosphere was great for a date night. We love trying new places and this one sticks out in the best ways. Would highly recommend checking them out.

The food was just ok, we spent about $200 for two steaks, three drinks, and an appetizer. We wouldn’t return.

Thank you for taking the time to write this review and for visiting us. We’re sorry to hear that your visit wouldn’t earn a second visit. So that the public has context, you purchased at least one of each of the highest priced items on our menu and still spent only $200. We are a locally owned small business and we have purposely tried to price our offerings competitively. Similar purchases at other elevated dine-in establishments in the area would have easily cost at least $350. I’m sorry that you weren’t pleased with your experience. Hopefully we will be able to establish a better value if you decide to return but it sounds like we will not have the opportunity.

We had brunch and it was excellent. Limited menu but very high quality and unique. Service was very good.

We had a great experience and great service. The food was deli delicious. A very comfortable ambiance. Also one of the best Old Fashioned I've had!

Pretty good new restaurant. Service was great. Autumn Burrata salad was fantastic, so flavorful. The Scotch Olives were just okay, too much breading. Steak was good

The appetizers were unique and delicious. The ambiance is top tier and the vibes are spot on. The steak was the one thing that didn’t live up. It wasn’t the best cut and an uneven cook. The manager spotted this and comped the whole meal. I never asked for a comp of any kind. That tells you how high of a standard they hold themselves too. Will definitely be back.
