What is Sake?
Nihonshu ('Sake')
A standard serving size is called a Go (180 ml. or 6 oz.) and is served in a porcelain Tokkuri (flask) with O-chokos (tiny porcelain cups) to drink from.
How is Nihonshu 'Sake' Made?
Polishing
Prior to the actual process of fermentation, rice kernels have to be polished—or milled. This removes the outer layer of each grain, exposing its white, starchy centre. Quality grades are determined by the polishing ratio which measures how much of the outer layer is milled away before it’s ready to be converted into fermentable sugar.
Fermentation
The master brewer, or 'toji', combines technique, experience, and skill to wash, steam, cool and prepare the finished rice for fermentation. Once cooked and cooled, other ingredients such as water, a type of mould spore called 'koji,' and yeast are added. This step is what contributes to the style and flavour of the end product.
6 Common Types of Nihonshu
Junmai 純米
Junmai is made using rice that has been polished to 70% or less and refers to pure rice, meaning that Junmai sake is brewed using only rice, water, yeast, and koji without the influence of additives such as sugar or alcohol. Junmai is generally richer and fuller-bodied with an intense, subtly acidic flavour.
Honjozo 本醸造
Honjozo is made using rice that has been polished to at 70% or less. However, Honjozo often has a small amount of distilled brewers alcohol added to it to smooth out the flavour and aroma of the sake, heightening it.
Ginjo 吟釀 or Junmai Gingo
Considered a premium sake, Ginjo uses rice that has been polished to at 60% or less. It is brewed using special yeast and sophisticated fermentation techniques that allow for a fruitier, more complex bouquet and flavour to develop.
Daiginjo 大吟釀 or Junmai Daiginjo
Junmai Daiginjo is super-premium sake. Daiginjo uses rice that has been polished to 50% or less. It is regarded by many as the absolute pinnacle of sake-making.
Nigori 濁り ‘cloudy’
Though not reflective of its quality, there is actual rice sediments floating suspended inside it. These cloudy varieties are what is known as Nigori. Nigori sake is typically sweet, creamy and viscous.
Futsushu 普通種
is sometimes referred to as table sake. The rice has barely been polished (somewhere between 70 and 93 percent)

Ochoko お猪口
A Ochoko is a small cyclindrical cup, often made of ceramic, which is best suited to sipping, usually about 45ml’s.
Masu 枡
Originally used as a measurement tool, a masu is a square, often wooden container about as large as your palm. These decorative vessels are favored for their natural aroma that softens the dryness of sake. A ochoko is placed inside a masu and purposely overfilled with sake. Customers are expected to first drink the sake in the ochoko, then enjoy the leftovers from the masu.
Tokkuri 徳利
A tokkuri is a large decanter-like vessel used as a pitcher to serve sake. They are generally tall, thin and made or a ceramic.
Junmai

Daiginjo

Umeshu
