Restaurant Olivia is a pasta-focused restaurant located in Denver’s Wash Park neighborhood. Olivia is the second project from chef Ty Leon, beverage guru Austin Carson, and hospitality maven Heather Morrison.

Each evening we open the doors to our restaurant as if it were our home, welcoming guests with warmth and graciousness. We believe you’ll feel our attention to hospitality the minute you step inside.

We draw inspiration from classic Italian dishes and the traditions that bring them to life, but we also feature flavors and recipes from around the world. Our food is made with care and intention. We source our ingredients from organic and local producers whenever possible. Our beverage program features expertly-crafted but playful cocktails, alongside an Italian-focused wine list.

We look forward to sharing with you our passion for outstanding food and service.

Join us for the next installment of our Apericena Wine Class series as we welcome special guest Kevin Day, editor-in-chief of Opening a Bottle, for an immersive evening exploring the wines of Mt. Etna. Etna continues to captivate—not just as a majestic, active volcano but also as one of the most exciting wine regions in the world. From vibrant sparkling wines to crisp, high-acid Carricante whites and refined, structured Nerello Mascalese-driven reds, the wines have never been better. Kevin Day is a great friend of Restaurant Olivia and a leading voice in the wine world—a journalist, photographer, and educator based here in Denver. His site, Opening a Bottle, is one of the top wine publications and an invaluable educational resource for our team. An unofficial Etna ambassador, Kevin has spent weeks in the region, interviewing producers and capturing its striking landscapes. For this special evening, our Wine Director, Scott Thomas, and Kevin Day will guide us through a 8-wine lineup, sharing personal stories and breathtaking photography, while Chef Ty prepares a light, two-pasta dinner, complemented by charcuterie and dessert, all served around our community table. Whether you’re a longtime lover of Mt. Etna’s wines or just beginning your wine journey, this promises to be an unforgettable experience.

The best meal I’ve had in a WHILE!! I’m gluten free and they had gluten free options for everything so i didn’t miss out!

Took a cooking class with a small group and learned how to make fresh pasta. This was such a wonderful experience! Thank you Heather and Team. I appreciate your thoughtful attention, snacks, experience and pasta to take home. Can’t wait to visit again. Thank you!

Wow. There were so many factors to tonight’s dinner being perfection. The food was divine- the butternut squash soup was a really awesome kickoff to an amazing night of incredible food. The little touches of hospitality from our server Kim tonight really put the cherry on top. She went above and beyond helping us pick the perfect menu for our night and I LOVE feeling celebrated with non-alcoholic champagne. Nothing makes this sober lady happier than type of little treat.

This restaurant is class. From the professionalism of the staff to the decor to the presentation of the food - first rate. Food wasn’t rushed, cocktails were outstanding, and the pasta is some of the best I’ve ever had. If I lived here, this would be my local. Chef’s kiss.

We have traveled through Italy extensively, and the food at Olivia matches or exceeds those. We had a great server, Greg, and the food was original and delicious. From the fresh focaccia to the cheesecake, the experience was incredible

Greg was an excellent server! The best! He was very knowledgeable, attentive, and caring! He was very cognizant of a food allergy we had and was truly amazing in every aspect of the dining experience. Thanks!
