Masterfully blending culinary traditions, contemporary techniques and seasonal flavour profiles, our Chef Meghan Fairman expertly creates thoughtful and artistically crafted menus that focus on honoring high-quality ingredients and their origins. This attention to detail follows to the bar, where freshly squeezed juices, old-school bartending techniques, and a wide array of available spirits, are meticulously melded to perfection. Locally crafted, small-batch breweries are represented alongside a diverse wine program focused on highly allocated and unique wines. With an inviting dining room and outdoor patio, we encourage you to come and experience the wonderfully crafted artistry of our culinary team.

A slow food restaurant, we suggest parties of two to four persons allocate two hours for service.

We had a truly outstanding meal. Cocktails, food and service were phenomenal. It’s in the Brunswick Inn, but Noble is an exception to the hotel restaurant rule and can stand on its own. There is a lot of culinary skill in this kitchen. The Inn looks like a nice place to stay as well, but the restaurant is not to be missed!

Got seated the host never told our server we sat down. Food was pretty blamed zero salt used. Steak frites came with out a sauce bone dry and over cooked. Also the menu in thier website didn’t match the one put infront of me. Will give it another try incase it was just an off night

Cocktails were all on the bland side. Food was tasty and nicely presented. Service was attentive. Lovely dining outside near the fire pit.

I never expected such a world class restaurant to be hidden inside a college town hotel, but Noble makes a visit to tiny Brunswick, Maine worthwhile. The outdoor patio - with firepit - was a quiet, fenced-in oasis off a busy street, with propane heaters to extend the season into fall. The wine list is well-curated with unique by the glass or bottle selections at reasonable prices. Servers were friendly and eager to please. The menu is creative and superbly executed by its female executive chef, who sources from a lot of local and sustainable purveyors. We were blown away by everything we tried. Put this place on your dining bucket list!

This was probably the best meal that we had in years. The chef and wait staff made our 51st anniversary dinner special.

the leek wrapped cod was superb.I like the way they serve the bread but it seemed a little small for an order-so good we ordered 2!!
