Chef ejecutivo Peter Merriman
Del equipo editorial de OpenTable: El LA Times una vez llamó a Peter Merriman «la Alice Waters aloha» debido a su célebre reputación de promover los ingredientes locales. En Merriman's, que abrió por primera vez en la Isla Grande en 1988, esto se traduce en una puesta al día de clásicos hawaianos como el mahi mahi con costra de macadamia y el falafel de taro. En 2018, el grupo abrió nuevos caminos en cuatro islas, y la última ubicación de Honolulu destaca por sus salvajes suelos verdes y blancos y estampados de la selva.

Every member of the staff is taught to respect the `aina (land) that feeds and the people who produce the food, to be proud in their work, and to take responsibility for making sure every customer has a memorable dining experience.
