As a luxury lounge bar, Evolve offers a sophisticated and intimate hospitality experience on Hobart’s historic waterfront. Its ornate design, rare spirits list and engaging service are befitting of Hobart’s most enviable wharfside location, within the MACq 01 Hotel building.

Humans have long tried to understand our world, explaining its complexities through theories of spirituality, biology, geography and astronomy. This insatiable thirst for understanding fuelled a period of unprecedented discovery during the 1800s with the mapping of our globe, the industrial revolution and the collection of countless botanical, zoological and geological artefacts. Our minds expanded with curiosity as mysterious fossils were uncovered; answering some questions, but presenting thousands more.

Dropped in on a quiet night for pre-dinner drinks, as we were guests at Mac01. The staff spent more time talking to themselves than providing even basic services to patrons. We ordered from their menu of spirits, only to be told after 15min they didn’t have it available, no problem, ordered another, 10min later told they didn’t have that either. One of us had their cocktail, the others went without. Popped over to Pearl & Co for dinner (great seafood). Joking asked if they had any top shelf spirits and great news they had both there… at a seafood restaurant. If a high end bar can’t stock decent spirits but a seafood restaurant can you know there are problems.

What a wonderful bar. The staff were friendly, knowledgeable, and welcoming. The fossils were so interesting. Cocktails divine! Loved everything about this bar.

A great little bar for pre show food and drinks. Our waiter was very knowledgeable and attentive. The food and drinks were excellent. There was a lovely ambience and we got to watch the sunset out the window.

Friendly service, great ambiance and a seemingly sophisticated design and theme for a cocktail bar. Fantastic cocktails and fairly priced when compared to surrounding options.

The whole experience was wonderful, never been there before recommend by a close friend. Decor was spot on and very different from any where else I’ve been in Hobart or Australia m. The staff where very attentive but not too much so, just right for the mood of the group and even when had only book for six ten people turned up and the bar staff suggested we could have a bigger table which was fantastic service.

Firstly had no food but couldn’t proceed with ticking a box.. bizarre Well the team were exceptional especially Ainsley (English fellow - think that’s his name) The whole team went out of their way to provide exceptional service and provide our party with late honour options which were appreciated!

The staff at Evolve Spirits Bar were friendly and nice. They took the time to talk about and recommend great Tasmanian produced gins, the whiskey cabinets and were overall quite helpful. Ambience and concept of the bar is unique and interesting - loved it and have shared this with friends. The food was alright; flavours were there for the duck croquettes, but texture was a little too wet and the flan was unfortunately a little on the eggy side, but the caramel sauce was delicious.
