Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

Sarah and Rebecca were amazing, every staff member was very professional and greeted us pleasantly, sat us quickly. The food was amazing as always. Choplins has been one of my favorite dining places since I moved here four years ago!

Great dinner at Choplin’s! Walked in and was immediately greeted and seated by Sarah. The filet and pork were both cooked perfectly (medium rare and medium). Service was wonderful with our server and Sarah both checking on us throughout the meal. They were able to modify an espresso martini to accommodate a dairy allergy and it was absolutely fabulous!

Food was phenomenal and high quality, Watson was an absolute joy to have as a server. Would recommend visiting.

New people serving us. They seemed to be in learning mode. Food not as good. Early bird discount disallowed because we had a groupon. Groupon was issued before they discontinued lunch service. It was for $25.00 and intended for lunch use. I had to use at dinner instead and soon because it was about to expire. So when you took away the early bird discount because of having groupon, it almost was a waste of purchasing the groupon. Split plate fee for two $10.00. That's high. Food prices have gone up too. When considering all the above, a restaurant that would have been on our "A" list has now dropped to a lower attractiveness.

I’ve been coming here for 8 years. It’s just NOT the same. All waitstaff has been changed. Menu is much more limited and more pricey. Some of my menu favorites dropped. The portions are not the same. It was a bit disappointing.

Enjoyed a very pleasant, wonderful & exceptionally delicious meal there this evening. Staff is friendly, smiling, so happy you’re there & to serve you. Our server Kelly was so attentive & amazing. Don’t miss it.

We celebrated 2 birthdays here and from the time we entered until the end of our meal, everything and everyone was above our expectations. It was our first time to visit Choplin’s, but have heard so many wonderful things from friends so we decided to make the trip from South Charlotte and so glad we did! It was everything we expected and more! And what a surprisingly beautiful space! A true hidden gem! Our server Sarah including the other staff, were all so attentive. We had the duck, lobster, Seabass and filet and every dish was perfect! I can’t believe we waited this long to finally try Choplin’s. We will definitely be back soon to make up for lost time! Thank you for a fantastic experience!
