Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

    We come here at minimum every year on our anniversary. This chef is a culinary master! Food and service is always top notch. If you've never been here, it's an excellent choice for special occasions.

    We always love the food at Choplins. It is very gourmet and the service was excellent too. I love the fact that they help prepare food for the homeless and during Covid they helped prepare food for school kids that were missing their lunch at school.

    The food was fantastic. Dessert’s are delicious. The restaurant is much nicer now since they made changes to the interior of the restaurant.

    Always a great dining experience. The staff is welcoming and interested in giving a wonderful dining experience. Our server was attentive without hovering. There is a variety of choices on the menu to satisfy everyone. Our meals were perfectly cooked; the chef knows how to cook steak and lamb to requested doneness. Choplins is our go to when we want a wonderful meal.

    The food is always exceptional as is the service. Our experience allowed us a lovely dinner of excellent food and conversation. Favorite place for us.

    A very nice dining experience from the food to the service. I enjoyed the “Different” Caesar Salad with the tasty French onion soup. They have comfortable booths covered in velvet material and pillows for added comfort. My friends enjoyed beet salad, salmon, and their duck is rated the best in the area. We will be back as we have dined there many times.

    Our server was amazing. He was waiting our table and bartending. The kitchen ran out of several entree items. as well as several dessert items. Our food arrived warm to almost cold.

    We had a wonderful experience at chuplin’s restaurant. The food is excellent. The service was great. The only thing I would complain about is that it took a long time between courses. But all in all. Great place to dine.

    Love this place. Food was prepared perfectly, served hot, and very pleasant looking on the plate. Very busy Friday night crowd very happy and talkative, made it hard for us to hear each other. But that kind of normal when there are lots of people in a small space. We will definitely be back.
