At Bivio our passion is authentic Neapolitan pizza.
Napoli... our love of the city, its cuisine, and in particular, its pizza is where our story began. We heard time and time again “It’s all about the dough.” True to Neapolitan tradition, and the passion of the pizzaioli, we construct our pizza using “00” flour from Naples, San Marzano DOP tomatoes, extra virgin olive oil, fresh basil, fior di latte or bufala mozzarella, and sea salt. Our dough is gently mixed using a 28 year old “lieveto madre” (natural yeast culture) then with intense heat is baked in our wood burning il forno. At Bivio all of our dishes are made with the freshest and highest quality ingredients.

Friendly staff, personable chef, fabulous food! What more could you ask for. We’ve never had a bad meal or experience at this establishment. It’s always a great night! Oh p.s….The pizza is amazing!

The food was very good. They clearly use fresh, quality ingredients. I wasn’t wowed by my pizza but was so satisfied. Sitting at the bar is fun because you get to watch them make the food in front of you. The staff is friendly and attentive. They aren’t open all week and demand is high enough to require reservations well in advance. I’m happy for their success. Will go again some day.

This is my favorite pizza place in the NY/NJ area! We always get the margherita, and this time we also tried a truffle pizza which was outstanding. This place, as tiny as it is, is very special.

Happy we got to experience Bivio’s contemporary take on Neapolitan pizza. The pizza has a larger crust that has a nice crispness. A traditional Neapolitan pie is moist and soft in the middle(lots of flop). Bivio’s pie has very little flop which is more of an american flair. We started with the fennel salad and glad we did. Dressing was not over powering with flavors of lemon zest mixed with the blood orange in the dish was refreshing. Was a pleasure to speak with Dana, David, & James who were happy to share there knowledge and joy of pizza and Bivio. This place is a must try.

The headline is and always will be as follows: the food is excellent. We’ve dined at Bivio’s multiple times and that’s what keeps us coming back. However, the service last night was less than great. We were rushed beyond belief. I get it, Friday nights are busy. But it took an unusually long time to be served our salad and then from there it was hurry up and be gone vibe. Not “would you be interested in dessert” but “anything else?” I honestly think our waitress was bummed to hear yes we’d like an affogato. Hallway through dessert we were met with “sorry to rush you but…”. Seriously? We were out the door in record time. Zero lingering. Not to mention we had the misfortune of being seated at the worst table (by the door on a frigid night). Our waitress never ever cracked a smile the entire night. Again if the pizza wasn’t so awesome we would never dine here again. This is the second time the service was so uneven. Major bummer.
