Back after more than a two year closure following the George IV Bridge in late 2021, Merchants has undergone a full refurbishment. Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh. Braised shin of beef, haggis and seared seabass are some of the dishes on an ever-changing menu, and the restaurant is happy to try and cater for any specific dietary requirements. Situated at 17 Merchant Street, Merchants Restaurant is proud to use fresh, locally sourced produce in its dishes.     Well done to Emma and the other at The Burrow for creating a beautiful, intimate and exclusive feeling cocktail and whisky drinking experience. The drinks were well designed, and the service exceptional. Would definitely visit again.

    Great evening alll round , a really great restaurant clean and with great atmosphere . The food was outstanding , we ordered grilled Haloumi & Hummus starters served with olives & breads and then Fillet Mignon steaks with Cajun chips & grilled vegetables with a choice of sauces .. the steak was cooked to perfection , tasted so good . A busy restaurant and some of the other dishes coming out to surrounding tables also looked amazing and mouth watering . The service was first class from the staff , polite , pleasant & attentive. Well done to all , our first time at Shish but it will not be our last . Also for the quality of food served very reasonable regards to price for the meal .
