Finding harmony between authenticity and originality is something that first ignited the flame at Mesa Verde back in 2013 and continues to feed it today. Para entrar al salón hay que subir un angosto tramo de escaleras desde la calle de ladrillos rojos. La sala es amplia y abierta y a la vez está llena de recovecos. Esto hace de contrapunto a la belleza íntima de proporciones perfectas de su pequeño establecimiento asociado de la planta baja. El French Saloon se inspira en la decadencia y la familiaridad de los bares y bistros de París, abarcando de finales del siglo XIX a principios del siglo XX, y encuentra afinidad en el disfrute de una compañía estridente y una sensación de travesura. Comience con champaña y caviar en la barra, y siga con tártara de res y botellas de borgoña.
