Imagínese que es un viajero que va de ciudad en ciudad en la Italia de 1600, y en sus viajes se encuentra con un pequeño pueblo. En este pueblo hay casas, tiendas y un bettolino - al cual entra, en vista de que tiene hambre. El ambiente es animado, hay mucha gente, y se ve rodeado por el murmullo de las conversaciones y el aroma de la cocina. El dueño se le acerca con un alto cáliz de vino y un plato humeante. Esa es la misma sensación que los comensales experimentan cuando cruzan las puertas de este establecimiento.
