Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken.     We were there on day 1 of a massive WA power outage.where most of east side seattle was experiencing a blackout and the few restaurants that were open had a 90 mins wait and frazzled skeleton staff. We drive around for a while and decided to make a last attempt at Redmond Town center and see if we could find a decent place with a reasonable wait. you never would have known this was all happening based on our experience at Matt’s. We were greeted and seated promptly. The staff were so cheerful and we were very hungry and our server took our order right away. I had the halibut fish tacos. Delicious and substantial pieces of fish in the 2 tacos. My friend enjoyed her steak bites and fries. I hadn’t been to Matt’s in years but will return after this experience.

    I was surprised that on a Friday at lunch time this place wasn’t packed. The three of us each had a savoury pie. They came with a generous sized salad and were all very good.

    I particularly want to give a shout out to our server who checked for food allergens and made lemonade from scratch because you didn't carry it. He was so thoughtful and efficient and really made the experience outstanding.
