Egle Loit, a trained pasta chef, has previously popped up mostly around East and North London, creating a buzz with her pre-restaurant residency at Vestry House Museum in 2023.Founder of Darling’s cares dearly about the craft that fresh pasta making requires. “One can turn humble ingredients into abundance with skill,” shares the restaurateur. Darling’s is designed to be an open space to be shared between the guests and the team, therefore there are no barriers between the service area and the dining area. The restaurant was well decorated and maintained. There were great songs playing, and these were similar to ones I listen to on my own. The music was also not too loud which was great. The waitress was very attentive and checked that we enjoyed our time/food.

In a year of enjoying some great meals, Silo has consistently delivered some of the very best. Every time we’ve visited, the experience has been flawless. Course after course of innovative, flavoursome, beautiful food. Tonight’s was the best yet. This places excites me. The evolution we’ve seen is amazing. New twists on existing dishes take each to an even higher level. And their value-driven, ‘no waste’ ethos is outstanding. Our favourite restaurant this year. So looking forward to many more meals in 2025.
