The third venue for the high-profile restaurateur couple Rinaldo Di Stasio and Mallory Wall, sits behind the King and Godfree complex on the corner of Lygon and Faraday Streets and has glamorous echoes of their Di Stasio Citta pleasure palace in the city.Designed by architect Di Ritter of Hassell, also responsible for Citta, the pizzeria has three separate spaces inside, adorned with Reko Rennie artwork and Shaun Gladwell sculptures, and a courtyard bar centred around a fountain imported from the Roman countryside.Chef Federico Congiu, who has worked with Di Stasio for five years, is making his own jersey milk mozzarella fiore di latte for the pizzas. Congiu has sourced five growers around the Yarra Valley to grow and preserve San Marzano tomatoes for pizza toppings and is having special durum wheat flour milled in Tamworth.

Finding harmony between authenticity and originality is something that first ignited the flame at Mesa Verde back in 2013 and continues to feed it today.     We recently dined at Salted Egg in the Quincy Hotel, Melbourne, opting for their $69 Tasting Menu. The experience was exceptional. The service was attentive without being overbearing, and the food was a delightful journey through Southeast Asian flavors. The Tasting Menu featured four courses, allowing us to sample a variety of dishes. Each course was thoughtfully prepared, showcasing the chef’s expertise in blending traditional and modern culinary techniques. The portions were generous, ensuring we left fully satisfied. The ambiance of Salted Egg added to the overall enjoyment, providing a comfortable and inviting setting for our meal. For anyone seeking a memorable dining experience in Melbourne, I highly recommend the $69 Tasting Menu at Salted Egg.

    Another exceptional dining experience. Unlike many other restaurants in Melbourne, Di Stasio continues to deliver an impressive dining experience. The food is produced to the highest standards, the service is attentive without being overbearing. The wine list offers a journey of exploration if you so desire. As for the artwork, it’s distinctive. I’m waiting for the day that Melbourne turns on a gorgeous day and I can enjoy dining in the garden.
