Formerly Deputy head chef at Chutney Mary and Head Chef at Veeraswamy, chef-proprietor Manoj Vasiakar has got the traditional / contemporary mix right on the money. Deciding what to have is agony – so make your mates promise to share, then start with Prawn and Aubergine Kharkhatla and move on to the delicately-spiced Fish Shirale (cooked in coconut milk and finished with onion and tomato masala) or the crackingly good Duck Chettinad.
