Jean‑Georges ofrece auténtica cocina de temporada con ingredientes de la granja a la mesa procedentes de Hudson Valley y Nueva Inglaterra siempre que es posible. El edificio, construido en 1833 como vivienda y utilizado más adelante como posada, ha sido cuidadosamente reformado manteniendo al máximo los elementos originales, como son las 4 chimeneas en funcionamiento. El interior del restaurante ha sido diseñado por Thomas Juul-Hansen y ofrece un ambiente moderno pero rústico, con elementos de zinc, mármol y madera reciclada. Su iluminación, ingeniosamente ideada por Hervé Descottes, emplea pantallas de papel y apliques Edison para crear un entorno cálido.
