Thomas Makris, originario de la isla de Skopelos, se enamoró de Helen Babalos cuando la conoció. Se encontraron por primera vez en 1974 en el restaurante Orestes Greek, mientras viajaban por Norteamérica como parte de un grupo de danzas griegas. Al poco tiempo de casarse tuvieron la idea de abrir un restaurante griego en donde todos son tratados como familia y disfrutan de una experiencia consistente con la deliciosa comida casera auténtica y un servicio impecable, algo único en Vancouver. Así abrieron Anatoli Souvlaki en 1984 al norte de Vancouver.
