DEXTER is a no rules approach to American BBQ brought to you by Adam Goldblatt, Sam and Tom Peasnell. Our meatery features the best Australian produce which is treated the right way. Chefs Tom (Pitt Cue Co, London) and Adam (Homeslice, London) pay homage to the low and slow traditions of American BBQ utilising smoking, chargrill techniques and pair this with flavours from Mexico, China, France and alike. The philosophy is a meat first approach, where a dish is formulated from the unique characteristics of the meat (or vegetable) for a truly unique meat experience. Think salted caramel ribs, hot meat donuts and dry aged Ribeye's.

Bluestone American BBQ features a Latin American spin on authentic low and slow traditions from the US BBQ belt. Chef Alvaro Malel draws inspiration from his Uruguayan heritage, and his passion for cuisines from both American continents to reimagine smoked classics like Yearling Beef Short Rib with chimichurri, and Pit-Braised Pulled Lamb with salsa criolla and arepas.His talent for bringing together the best of North and South American food traditions has been a drawcard for diners across Melbourne since the restaurant opened seven years ago. He credits the success of Bluestone to his Uruguayan culture and heritage, which is all about “food, family and fire…BBQ is a feature of all my best memories. Our Croydon Taphouse is open to the public five days a week from Wednesday to Sunday. Enjoy a range of core and limited Dainton releases, as well as a locally-sourced cider, all expertly poured from our 14 custom taps.We've got a great selection of local wines and spirits, as well as a food menu that includes mouth-watering burgers and delicious share plates.We've always got something exciting happening, from weekly trivia nights to limited edition beer releases.Please note although there is some cover in the Beer Garden, if there is rain we will do our best to move you inside but we can't guarantee a table, also the tables for 2 are barrel tables with no cover. **Please note our kitchen closes at 7:30pm on Sundays**

    Apart from the food and service being exceptional, the Goodland Jungle Juice DIPA was literally next level for this style. I had lamb shoulder and my 2 friends had steak. The sides, of note the roasted Broccoli were delish. The 12 year old Bunnahabhain Scottish single malt distilled on the rugged cost of Islay made for the perfect finish.

    Place reservation on Saturday for Sunday and had no problem getting a table. Staff were friendly and helpful.

    If you want a review of the steaks at Meat Maiden, scroll on. I didn’t order steak…which is perhaps akin to going to Red Rooster and not ordering chicken. I went for the miso cauliflower, perhaps not the first choice of most diners. But I made our reservation because I knew my mega-carnivorous husband would love it. And he did. So yes, the food was excellent. Go for the food. But waaaaaaaay better than the food were the staff. Unlike the current trend for waitstaff to make it obvious they’d rather be anywhere than taking your food order, MM staff all genuinely looked like they wanted to be there. They were joyful, engaging and had each other’s backs. They worked together like a well oiled machine and it was fun and heart warming to watch. I’d go back for the chips. For the crème caramel, for the cauliflower and the donut. My husband would go back for the burnt ends and the pork belly and scallops. But most of all, we’d go back for Nathan and the rest of the staff.
